Egg & Avocado Toast
Sometimes, it's okay to be basic.
Prep Time: 8 minutes | Cook Time: 35 minutes
2 tablespoons olive oil
1 small yellow onion, chopped
1/4 cup water
4 slices sourdough bread
1 medium avocado
Red Leaf Mix
Fresh basil leaves, chiffonade
Pepper to taste
Heat medium non-stick sauté pan over medium heat until hot; add olive oil. Place onions and water, stirring occasionally until golden brown.
Meanwhile, toast bread slices, as desired. Spread avocado on bread slices. Set aside.
For sunny side up, heat medium-low non-stick frying pan until hot with non-stick cooking spray. Add eggs; cook until white is opaque, about 1 to 2 minutes.
Place onions and eggs on the avocado spread. Top with lettuce, basil, and pepper, as desired.
