1 cup flour
2 teaspoons cinnamon
1 teaspoon baking powder
1/8 teaspoon salt
2/3 cup diced fresh strawberries
6 tablespoons unsalted butter, melted
2 large egg whites
2/3 cup granulated sugar
6 tablespoons buttermilk or whole milk
Preheat oven to 400°F. Add eight liners to muffin pan, set aside.
In medium bowl, whisk together flour, cinnamon, baking powder and salt. Set aside.
Place strawberries, butter, eggs, sugar and milk in large mixing bowl. Beat on medium speed of electric mixer for 2 minutes, or until well combined. Add flour mixture, beat on low speed until blended.
- Divide strawberry mixture between liners, filling each about 2/3 of the way top. Bake for 19 minutes, or until golden at the top. Remove from oven; let cool for 1 minute. Serve.
