Shortbread Minis

Julia’s favorite cookie!

Prep Time: 12 minutes | Bake Time: 11 minutes

Ingredients

2 3/4 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
13 tablespoons unsalted butter, melted
3/4 cup granulated sugar
2 tablespoons vanilla extract
3 eggs
2 1/4 cups confectioners’ sugar
1 teaspoon vanilla
4 tablespoons milk
Food coloring, optional
Sprinkles, optional
Nonpareils, optional

Directions

Cookies
      1. Preheat oven to 350°F. Spray baking pan with nonstick baking spray or butter the pan. Set aside.

      2. In a medium bowl, whisk together flour, baking powder and salt. Set aside.

      3. Place melted butter and sugar in large mixing bowl. Beat on medium speed of electric mixer for 2 minutes, until light and fluffy. Add eggs and vanilla; mix well. Add half of flour mixture; beat on low speed until smooth, then add the remaining flour mixture, beating the batter until blended.

      4. Roll dough into 1 inch balls and transfer to baking sheet. Bake 11 minutes, or until golden around edges. Remove from oven; let cool on baking sheet 1 minute. Cool completely on wire rack.
Glaze
      1. Place sugar, vanilla and milk in medium mixing bowl. Beat on low speed of electric mixer for 2 minutes, until well combined. Add food coloring, if desired. Mix until combined.

      2. With a spoon, drizzle cookies with desired amount. Top with sprinkles or nonpareils, if desired.

Makes 18 servings.
