Hard Boiled Egg Green Salad
Spring greens with an egglicious kick!
Active Time: 30 minutes
1 head lettuce
1 avocado, chopped
2 slices mozzarella cheese, cut into fourths
1 green onion, chopped
Salt to taste
Pepper to taste
Add about 1-inches of warm water in a saucepan; carefully add eggs with a mesh strainer.
Heat saucepan over high heat; bring to a boil.
Remove saucepan from heat; cover. Let stand for 15-minutes.
In a large bowl, add cold water and ice cubes. Transfer eggs to bowl; let stand for 10-minutes. Peel and slice lengthwise; set aside.
- Arrange lettuce, eggs, avocado, cheese and onions in two bowls. Drizzle with olive oil. Sprinkle salt and pepper, as desired.
