Easy Banana Cake with Cream Cheese Frosting

Ingredients

1 Duncan Hines Classic Yellow Cake Mix
1/8 tablespoon baking powder
1 egg
3/4 cup water
3 bananas, overripe, mashed (about 1 cup)
2 tablespoons walnuts, crushed (optional) 

Vanilla Cream Cheese Frosting

6 tablespoons cream cheese
2 tablespoons unsalted butter
2 tablespoons whole milk
1 3/4 cup powdered sugar
1/8 teaspoon Salt
2 tablespoons vanilla extract

Directions

      1. Preheat oven to 350°F. Spay 13×9 or two 8-inch cake baking pans with nonstick baking spray or unsalted butter; dust lightly with flour. Set aside.

      2. In medium bowl, stir together dry ingredients.

      3. Beat egg, water, and bananas well. Add dry ingredients slowly, mixing well after each addition. Fold in walnuts.

      4. Pour into prepared pan. Bake 29 minutes, or until light golden brown. Remove from heat. Let cool for 10 minutes.

      5. For topping, in large bowl, beat cream cheese, butter, milk, powdered sugar, salt, and vanilla extract until creamy. Spread over cake layer (We didn’t eat this cake right away, so I stored in refrigerator for 10 hours).

      6. Slice and serve. Store any leftovers, covered in refrigerator.
