Cucumber Sammies

Light. Fresh. CRUNCH!

Ingredients

4 slices Artesian Bread
1 medium avocado
1/2 cucumber, thinly sliced
1 green onion, chopped (optional)
Salt to taste
Garlic powder to taste
2 eggs, sunny-side up (optional)

Directions

      1. Toast bread slices, as desired. Lightly mash avocado. Divide avocado between slices of toast.

      2. On each bottom half, layer 1/4 cup cucumber. Sprinkle onions, salt and garlic powder, as desired. Add remaining cucumbers, folding to fit. Top with a sunny-side-up egg. Place top half of sandwich, cut side down.

Makes 2 servings.
